A graduate of Texas A & M University with one degree in finance and a second in accounting, Archon Pappas is Vice President and Chief Operating Officer of Luby’s, Inc., a public company which owns and operates 128 restaurants in Texas and adjoining states. Along with his brother, Christopher, he owns and operates the Pappas Seafood restaurants in the Houston area.
Archon Pappas and his wife, Vicky, were married in 1973 and have six children.
